Hairy Crab, known as Mao Xie, is a Chinese oolong that sits right in the sweet spot. It’s floral, layered, and just a little bit addictive. The kind of tea you brew once, then immediately want to steep again.

Grown in China and crafted in the traditional oolong style, Hairy Crab is partially oxidised, which gives it both freshness and depth. It bridges the gap between green and black tea, offering brightness at the front of the sip and warmth underneath.

100g

Appearance

The dry leaves are tightly ball-rolled, typical of many Chinese oolongs. When infused, they slowly unfurl into full leaves edged with fine downy hairs, a sign of careful plucking and handling. The liquor brews to a clear, golden hue that looks as inviting as it tastes.

Aroma & Flavour

Hairy Crab is known for its floral aroma, often compared to orchids. The first infusion is fragrant and bright, with a soft sweetness that lingers. As the leaves open over multiple infusions, the flavour becomes more layered.

Expect:

  • Fresh floral notes
  • A smooth, rounded body
  • Gentle sweetness
  • A clean, lasting finish

It’s balanced without being heavy and expressive without becoming overpowering. Each steep reveals a slightly different angle, which is part of its appeal.

Mouthfeel

The texture is smooth and lightly creamy, coating the palate without feeling thick. There’s a natural sweetness that builds gently rather than hitting all at once.

How to Prepare

Hairy Crab responds well to slightly hotter water and multiple infusions.

  • Water temperature: 90–95°C
  • Steeping time: 2–3 minutes
  • Tea quantity: 4–5 g per 180 ml
  • Infusions: Suitable for multiple brews

For a more traditional approach, use a small teapot or gaiwan and enjoy several short infusions, allowing the flavour to evolve with each steep.

Hairy Crab (Mao Xie) is ideal for those who enjoy floral oolong teas with complexity and depth. It’s refined but approachable, expressive yet balanced. A tea that rewards attention and keeps you coming back for one more cup.
